Black Bean and Rice Salad
Ingredients:
- 1 15 oz. can black beans
- 3 cups cooked brown rice
- 1 1/2 cups finely grated raw zucchini
- 1/4 cup freshly chopped cilantro
- 1/2 tsp cumin
- 1/4 tsp black pepper
- Salt to taste (sea salt or kosher)
- 2 garlic cloves (chopped)
- 1 tbs olive oil
- 1/2 cup diced red onion
- 1/2 cup grated Parmesan cheese
Directions:
Cook the rice according to the directions on the package and allow to cool completely. Drain and rinse the black beans. Now, combine all ingredients in a large bowl and serve.
