Roast Glazed Salmon

Ingredients:

  • 2 pounds salmon
  • 1/4 cup maple syrup
  • 1/4 cup balsamic vinegar
  • 1/8 tsp fresh cracked black pepper
  • 1/4 tsp sea salt
  • 1 garlic clove (minced)
  • Fresh parsley or mint (garnish)

Directions:

While the oven preheats to 450 degrees, very lightly spray a pan with nonstick spray. Cut salmon into six fillets of equal size. Using a small pot on the stove top, cook maple syrup, garlic and balsamic vinegar over low heat. Heat only until the mixture is hot but not boiling and then remove from heat. Split this mixture in half. One half will be used for basting while cooking and the other half put aside for after fish is removed from the oven. Make sure fish is completely dry and then place them skin side down on the baking sheet. Use half of the maple syrup and balsamic vinegar to brush on top of the fish. Bake the fish for about 10 minutes and then brush the fish again with the maple syrup and balsamic vinegar. Bake for another 5 minutes and then baste again. Continue cooking for five minutes and then basting until fish is done. You know fish is done when it flakes apart easily. It should take about 20-25 minutes total cooking time.
Remove fish from the oven and place them on serving plates. Top the salmon fillets with salt and pepper and the remaining maple syrup and balsamic vinegar mixture. Use the fresh parsley or mint as a garnish.
