Spiced Fajitas



1 lb. shredded pork tenderloin
3/4 cup shredded cheddar cheese
  • 3 cups shredded lettuce
  • 3 medium tomatoes
  • 1/2 white onion
1 cup favorite salsa
  • 1 tbsp. chili powder
  • 1/2 teaspoon oregano
1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • several whole-wheat flour tortillas (about 6-8)


Chop tomato and onion. Cut pork into strips if not already cut when purchased. Pre-heat skillet over medium heat.

Meanwhile, using a medium size bowl, mix oregano, paprika, garlic powder, and chili powder to create seasoning mix. Coat pork strips in seasoning completely. Gently add pork and onions to skillet cooking over medium to high heat until desired doneness. Pork should be cooked completely till browned on all sides. Add cooked pork to tortillas and top with cheese, tomatoes, lettuce, and salsa.

Fold close tortillas and serve.
