Sweet Pineapple Salsa


  • 1 small can pineapple pieces in juice
  • 1 tablespoon fresh lime juice
  • 1 medium avocado
  • 1 small jalapeno, (remove seeds)
  • 1 tablespoon honey
  • 1 tablespoon extra virgin olive oil
½ red onion
  • 1 1/2 tablespoons minced cilantro leaves
  • Salt and pepper


Drain pineapple juice and save juice in separate container. Dice jalapeno, onion and avocado. Using a medium size bowl, combine 2 tablespoons of the pineapple juice with the lime juice. Add the honey, oil and jalapeno. Season with small amount of salt and pepper just to taste. Mix in the pineapple pieces, onion, avocado and cilantro. Chill about 15-20 minutes in refrigerator before serving to allow flavors to blend.
