Asparagus Potato Soup
Ingredients:
- 1 1/2 cups potatoes
- 1/2 cup onion
- 2 stalks celery
- 1/2 lb. fresh asparagus
- 4 cups water
- Lemon zest
- black pepper to taste
Directions:
Peel and chop potatoes and onion. Chop celery and asparagus into 1/4” pieces. Using a large pot combine potatoes, onion, asparagus and celery. Add water and boil. Reduce heat and simmer covered for about 20 minutes until vegetables are tender.
Top with lemon zest and pepper to taste. Let cool a few minutes and serve.
