- 1 lbs. pork tenderloin
- 1 tablespoon olive oil
- 1/2 cup apple chop
- 1 cup chopped onion
- 1 1/2 tbsp fresh chopped rosemary
- 1 cup low-sodium chicken broth
- 1 1/2 tablespoons balsamic vinegar
- Freshly ground black pepper, to taste
Trim pork of all visible fat and preheat oven to 450 degrees. In a medium size skillet heat olive oil on high and add pork.
Add pepper and cook about 10 minutes flipping half way through. Make sure pork is cooked thoroughly.
Coat a baking pan lightly with cooking spray and place cooked pork inside. Cook pork for about 12-16 minutes until about 170 degrees.
While pork roasts, sauté onions and apples over medium heat, about 5 minutes.
Add broth and vinegar to apples mixture and bring to boil about 5 minutes. At time of serving pour mixture over pork and serve.
