(Dash Diet Breakfast Recipe)
- 3 eggs
- 1/2 lb. sausage
- 1/2 small onion
- 1/2 small green pepper (optional)
- 1/2 medium tomato
- 1/4 cup fat-free cream
- 3 ounces shredded cheddar cheese
- Salt pepper to taste
Chop fine onion, pepper and tomato. Combine sausage and onion in skillet and cook till browned. Drain grease and add optional pepper and tomato. Continue to cook mixture over medium to medium-high heat until peppers are tender, about 15-20 minutes. Put mixture onto plate lined with paper towel to drain and dry. Using a baking dish or pie pan, combine drained mixture and spread cheese evenly over top.
Using a separate bowl combine egg, pepper and salt and whisk. Lightly mix in cream. Pour evenly egg mixture over the sausage and cheese mixture. In a oven heated to 365 degree, bake for 30-40 minutes. Let stand for 15 minutes before serving.
Makes about 4 servings.
(Baking Tip: Insert knife into center of mixture directly after baking. If knife comes out clean, recipe is done.)
