- 1 lb raw, peeled and deveined shrimp
- 4 tbs tomato paste
- 3 tsp water
- 1 tsp extra virgin olive oil.
- 1 tsp minced garlic
- 1 tsp chili powder
- 1 tsp fresh oregano (chopped)
Prepare the Shrimp: wash in cool water, drying with a paper towel and set them aside on a plate.
Prepare Marinade: Using a wire whisk, combine tomato paste, water and olive oil. After these ingredients are mixed well, add the garlic, chili powder and oregano. This mixture should be fairly thick. Brush the mixture onto both sides of the shrimp. Place the plate of shrimp into the fridge.
Cook: You may use a charcoal grill, gas grill or a broiler grill. Start a hot fire if using a charcoal grill or heat up the gas grill or broiler grill. Lightly spray the grill rack or broiler pan with cooking spray. Make sure you do this away from the heat of the grill. Place the sprayed rack about 4-6 inches from the heat.Using a grill basket or skewers, place the shrimp on the grill. After about 3 minutes turn the shrimp. Watch the shrimp closely as cooking time will depend on the heat of your grill.
